Strawberry Pudding


Ingredients
Milk - 1 litre
Strawberry sauce - 1 cup
Cornflour - 3 tbsp
Fresh Bread crumbs - 1 cup
Optional cake decorations - 2 drops of red colour

Method
Heat the milk in the thick-bottomed pan. Remove a cup of it while still lukewarm. Mix the cornflour and keep aside. Continue to heat the milk on low fire till the amount in reduced to half its quantity, stirring from time to time so that it does not stick to the bottom of the pan. Once the quantity has reduced to half, mix in the bread crumbs and the cornflour and continue to stir all the time till the pudding begins to thicken. Stir and cook for 2-3 minutes and put off the heat. Mix in the strawberry sauce and steam till the colour at this stage. Pour the contents into muffins cases. Place the muffin trays into a steamer and steam till pudding is set. This should take around 25 minutes.

Once the top of the pudding looks set, put off the heat and allow it to cool completely. Place in the fridge for 2-3 hours and then losen the sides of the pudding with the tip of a sharp knife and turn the pudding muffins into a serving plate. You can use a microwave on high for only 3 minutes to start with and if pudding is not set, microwave for one minute more. Allow to cool and then turn over and decorate with cake decorations.
